Started in 2008 by Céline Gormally, Les Dolomies is named after the magnesium limestone found in the area where her vineyards are situated. The iridescent marls and limestone outcrops can be found throughout the vineyards. They are one of the best geological soils for Jura grape varieties, and this shows through Céline's wines. Céline is truely dedicated to biodynamic farming practices, and opts not to use chemicals or machines at any stage of the process. 

 

The 'Les Combes' is Chardonnay from vines that are 70+ years old, situated just below the town of Passenans. The fruit was fermented for 18 months on fine lees in old Meursault barrels. This Chardonnay is a little left of centre, but in a good way. It has a rich creamy aspect, but also piercing acidity and leanness. Realllly wonderful. So much going on.
