Hard harvested fruit from 40yo grafted vines was destemmed and fermented in small open fermenters, with gentle pigeage twice a day. After eight days on skins the wine was gently pressed and after settling, racked to seasoned french oak for nine months maturation. Bottled without filtering, fining or additions. 100% grapes.
