In the Okayama region they use mainly ‘Omachi’ rice which is considered the queen of all rice, best grown in the region and has a unique and delicious taste. This is made using the ancient badaimoto technique developed by monks hundreds of years ago. Its lightly nigori filtered which means it has traces of the rice it was made from.
